MacTrast has this article listing 10 apps that they consider essential for OS X.
The first item, 1Password, I would agree with. Number 6, Dropbox is also a favorite of mine. I also use #8, the iWork apps. At one point I would have agreed with Adium but haven’t used much chat software for sometime.

Note: In the past I have recommended having a backup program incase a vendor doesn’t show for a presentation. Having a list like this with perhaps a panel providing some alternatives would be a great topic to have as a backup.
