Voice Candy
The author of this web site refers to Voice Candy as "Photo Booth for your microphone."
Voice Candy comes with 8 different effects. For example, you could have a conversation between Darth Vader and Alvin the Chipmunk just by selecting the correct effects.
It uses a global shortcut key to toggle between start & stop recording. It can also be used as reminder (alarm) service using your own voice. It will even wake the Mac up from sleep to sound the alarm.
Of course, any audio recording application can provide note recording, but it allows you to organize your recorded notes into folders.
Email the recording and take it with you on the iPod via a playlist. It is also AppleScript compatible to make Voice Candy work with your other apps.
